Discover the heritage of Idiazabal cheese

500 years of history, tradition, and flavor

Over 7 generations of making artisan cheese

Learn how the Goiburu family has been making artisan cheese for over 7 generations in one of Gipuzkoa’s historic farmhouses.

For over 200 years, the Goiburu family has been making D.O. Idiazabal shepherd’s cheese in the traditional artisan way at Ondarre. The farmhouse dates back to the mid-16th century and is located in the medieval heart of Segura.

On our guided tour of Ondarre, we’ll show you everything: the farm, the cheese dairy, the museum, and we’ll finish with the best D.O. Idiazabal Cheese tasting in the Basque Country.

Discover an authentic family cheese dairy, visit a farmhouse over 500 years old, learn about the traditional Idiazabal cheese-making process, and enjoy a guided tasting of award-winning cheeses.

It’s not just a visit, it’s an experience

We don’t just visit another cheese dairy. We give you the chance to walk through a farmhouse nearly 500 years old, where eight generations of the same family have made cheese the same way, resulting in an Idiazabal cheese that has won the most important awards in the country.

And the person talking to you isn’t a hired guide: we are the ones who look after the sheep and make the cheese.

We, the Goiburu family, have been raising Latxa sheep for over 7 generations and making D.O. Idiazabal shepherd’s cheese for over 200 years, always in the artisan way.
