USED TO DO.

In the pastures of Urbia as well as in the maturing room, day after day and throughout the year, we shepherds work to look after the flock. The well-being of the black-faced sheep that have accompanied us through history is essential for the excellent result of our work: our Ondarre cheese.

FROM JOXE JOAKIN TO ENEKO

FOR MORE THAN 200 YEARS THE GOIBURU FAMILY HAS BEEN ENGAGED IN SHEPHERDING AND SINCE THEN, GENERATION AFTER GENERATION, FROM RELATIVE TO RELATIVE, THE TRANSMISSION OF THIS PROFESSION HAS TAKEN PLACE IN OUR HOME. MOST RECENTLY, FELIX AND KARMELE HAVE PASSED THE TORCH OF THE ONDARRE CHEESE DAIRY TO ENEKO.

JOXE JOAKIN GOIBURU

He lived in the Hirumeingo farmhouse and had 6
children. We believe they were shepherds
even before then.

JOXE INAZIO GOIBURU

Joxe Joakin’s youngest son
married into the Korrale farmhouse,
receiving sheep as a dowry.

FLORENTINO GOIBURU

Joxe Inazio’s only son.
Florentino’s 4 sons were also
shepherds in Urbia.

FELIX GOIBURU

Our great-grandfather Felix was
Florentino’s eldest son.
He bought the Ondarre farmhouse
with the family’s help.

SANTIAGO GOIBURU

Born on St. James’ Day, he provided
our father with his education.
Champion in Ordizia in 1970.

FELIX GOIBURU

Despite having an education, he dreamed
of the farmhouse and took up shepherding
together with his wife Karmele.

ONCE FELIX AND KARMELE DECIDED TO BUILD THEIR LIVES CLOSE TO THEIR FAMILY ROOTS, THEY RETURNED TO SEGURA IN 1977. BASED ON ENTREPRENEURSHIP AND HARD WORK, IN ADDITION TO CREATING THE RURAL GUESTHOUSE AND THE BUTCHER SHOP, THEY HAVE TAKEN ONDARRE CHEESE TO THE HIGHEST LEVEL.

ENEKO GOIBURU

Following in his father’s footsteps, he changed
professions and joined Ondarre to
continue the family tradition.

Incomparable companions

THROUGHOUT THIS LONG JOURNEY, THE SHEPHERDS IN OUR FAMILY
HAVE HAD A FAITHFUL COMPANION, THE LATXA SHEEP.

SHEEP

“Txokololate”, “Zuri haundie”, “Pinttoa” or “Ahuntze”
are the names of some of our sheep.

This small and sturdy curly-haired rural animal
has had an undeniable ability to adapt to our environment.
The Ondarre flock consists of approximately 230 sheep.
Ours is a commitment to limited production; prioritizing animal welfare
and constant care of the product, putting quality
over quantity. The awards received at the Ordizia
cheese competition from the 1920s to the present day are the clearest indicators of this quality.
