was paid at auction for half a 650g cheese. So, we can say
it is one of the most valuable cheeses… Ondarre cheese.

INTO CHAMPIONSHIPS IS NO SMALL MATTER
IN OUR HOUSE; MOREOVER, IT IS A RITUAL.
The cheese we enter is agreed upon by taking the pieces that my father and I have our eyes on and doing a tasting among everyone at home. It’s like a small preliminary competition. Based on the characteristics valued in the championship, we analyze the distinctive value we can offer, and the cheese that will represent Ondarre will emerge from those selected.
